An elegant dish, the wild rice with roasted nuts and cauliflower would go amazing with something as simple as roast chicken. So, if you’re trying to reign in on the energy you spend behind a meal but still want nothing short of a flavorful palate, this recipe is the one for you.


  • Cauliflower florets – 4 cups
  • Olive oil 
  • Sea salt 
  • Pepper 
  • Wild rice – 1 cup 
  • Cold water – 8 cup 
  • Slivered almonds – ½ cup
  • Chopped mint – ¼ cup
  • Golden raisins (optional) – ¼ cup.

Step 1: Before anything, it’s important to preheat the oven for baked dishes. Set the oven to 425° and preheat it. Line your baking tray with parchment paper and toss the cauliflower with ½ salt and 2 tablespoons olive oil. Roast in the oven for 30 minutes or until the cauliflower is nicely cooked, tender, and has a good caramelization.

Step 2: To cook the rice, mix in a teaspoon of salt with the rice sitting the water and bring to a boil. Cover with lid and on a moderately low heat, simmer until the rice is tender but retains the chewy texture. It may take anywhere from 50 to an hour and 10 minutes. Drain the rice well.

Step 3: Toast the almonds in a small skillet over medium heat until golden brown.

Step 4: Add 2 tablespoons of olive oil, almonds, mint, the cauliflower, and golden raising into the wild rice. Season properly and transfer to a plate.

With a total estimated cook time of about an hour, these measurements would feed 4 people.

2. Wild Rice Tabbouleh

Switching out the traditionally used bulgur wheat for the wild rice makes this recipe a simple gluten-free version of the famous Middle Eastern Salad. And let’s be honest: You can’t talk about wild rice without the mention of tabbouleh.


  • Wild rice – 1 cup
  • Cold water – 8 cups
  • Diced fresh tomatoes – 2 cups
  • Diced, peeled, seeded cucumber – 2 cups
  • Olive oil – 2 tablespoons
  • Lemon juice – 2 tablespoons
  • Chopped mint – ¼ cup
  • Chopped parsley – ¼ cup
  • Sea salt

Step 1: In a large saucepan, combine rice, water, a teaspoon of salt and bring to a boil with the lid on. Simmer over moderate low heat until the wild rice is soft but the chewy texture remains. Should take about an hour. Drain the rice properly.

Step 2: Add tomatoes, cucumber, mint, lemon juice, parsley, and the remaining oil with the rice and give it a good toss. Add the salt and serve at room temperature. 

This serves 4 people.

3. Spicy Rice Casserole

A perfect recipe to give your tongue that punch of heat, a spicy rice casserole is perfect for any occasion. Make some for dinner on a weeknight, or cook up a batch before your next brunch. It’s so simple yet so yummy that everyone will ask for seconds.


  • Fast cooking wild rice mix – 1 package, or 6.20 ounces.
  • Mild bulk pork sausage – 1 pound
  • Ground cumin – 1 teaspoon
  • Garlic powder – ½ teaspoon
  • Chopped onions, medium – 2
  • Chopped green peppers, medium – 2
  • Reduced-sodium beef bouillon granules – 2 teaspoons
  • Boiling water – 2 cups
  • Seeded and finely minced jalapeno peppers – 1 to 2

Step 1: Cook the sausage, garlic and cumin powder in a large skillet over medium heat until the pinkness of the meat vanishes. Drain the liquid. Add green peppers and onion to the chicken and sauté until that nice crispness has been achieved.

Step 2: Dissolve the bouillon in water and pour it into the skillet. Stir in the rice, rice seasoning packet, jalapeno and leave to boil for a while. Decrease the heat and simmer without the lid until the water is absorbed (around 5 to 10 minutes).

4. Turkey and Wild Rice Soup

Turkey and wild rice soup is the ultimate comfort food. Whether you’ve been feeling under the weather, or just relaxing in the house on a drizzling monsoon afternoon, the dish is sure to always win your heart. 


  • Uncooked wild rice – ½ cup
  • Water – 4 cups
  • Butter, cubed – ½ cup
  • Red potatoes, chopped – 8 oz.
  • Medium onion, chopped -1 
  • Celery rib, chopped – 1 
  • Medium carrot, chopped – 1 
  • Garlic cloves, minced – 2 
  • All-purpose flour – ½ cup
  • Chicken broth – 3 cups
  • Half-and-half cream – 2 cups
  • Salt – 1 teaspoon
  • Dried rosemary, crushed – ½ teaspoon
  • Cooked turkey or chicken, cubed – 2 cups

Step 1: Combine rice and water in a saucepan and bring to a boil over high heat. Immediately reduce the heat, cover with a lid, and simmer for 30 minutes.

Step 2: Heat butter at medium heat in a Dutch oven. Add onion, potatoes, carrot, and celery. Cook for 6 to 8 minutes with occasionally stirring the pot. Add the garlic and cook it for more than a minute.

Step 3: Add flour and stir till blended; cook and stir for 2 minutes. Simultaneously stir the wild rice and broth. Bring the temperature to medium-high heat and cook for about a minute to two, or until the sauce has thickened.

Step 4: Add seasoning, cream, or rosemary according to wish. Simmer for 15 to 20 minutes without the lid, or until the rice is tender. Fold the turkey into the rice.
